Zucchini and Carrot Quinoa Loaf

When I went to France on exchange and found out that I was going to have to cook for myself, I was not exactly going in as the next Gordon Ramsay. I was in fact quite the opposite. Being used to having dinner made and not having to worry about how to make a pasta sauce was the luxury I was given by my parents. And for that I am very grateful. But when put into this situation, I made the best of it and made sure I wouldn’t starve for the next 30 days. Thanks to my exchange I was given the opportunity to cook with a professional organic chef. It was truly a great experience, and from that I learned how to make this fantastic vegetable loaf. The ingredients we used were all organic but non organic ingredients work just as well.

You will need

  • A loaf tin
  • 1 large zucchini
  • 1 large carrot
  • 3 eggs
  • ½ cup of quinoa
  • ½ cup of flour
  • 3 tablespoons of plain yogurt
  • 1 tomato
  • 1 teaspoon baking powder
  • 1 teaspoon cumin, turmeric, curry and salt (each)
  • 2 tablespoons of butter


  • Preheat the oven to 350 degrees Fahrenheit
  • Start by melting the butter and greasing the loaf tin, add some flour to the tin and put in the fridge
  • Using a grater, grate the zucchini and carrots and leave in a bowl
  • Bring water to a boil and cook quinoa for 5-7 minutes and put to the side
  • Add the eggs, yogurt, baking powder, flour and seasonings to the vegetables and mix together, then add the quinoa to the rest of the mixture
  • Cut up the tomato into thin semi slices and place at the bottom of the tin as decoration
  • Pour mixture over the tomatoes and bake for 45-50 minutes
  • Let cool and then flip over to serve

This recipe goes great with grilled fish or even chicken. It is healthy and full of flavour so try it out for yourself! Bon appetite!
