For the past 2-3 years or so, it seems like gluten free foods have taken over our food industry. More and more restaurants are beginning to incorporate gluten free items into their menus to accommodate those with gluten allergies or intolerances. For those of us who don’t have gluten allergies/intolerances, we often speculate and wonder “Does it actually taste good?” or some may ask, “What is gluten”. Well here’s the truth: gluten free alternatives are not only healthy but can also be tasty! There continues to be more and more great recipes for those gluten free eaters. You can see it all over Instagram, Facebook, Pinterest etc. where people post recipes and tips for gluten free living.
For lunch and dinner it is quite easy to stay away from gluten, by using gluten free pasta or rice. But you can also stay away from all things gluten by eating more greens and protein. But for dessert, it becomes a challenge to find something that is both delicious and cost efficient. Usually these “fancy” gluten free dessert options come at a price and they end up having no flavour or worse, barely edible. Not to mention the high sugar content in most gluten free dessert options. Now although I myself am not gluten free, I still do like to try new and healthy recipes of all kinds. I recently came across another gluten free cookie recipe which I absolutely love. With only 4 easy ingredients, these cookies will change your mind about gluten free. Try it out!
Gluten-Free Banana Chocolate Chip Cookies
2-3 ripe bananas (mashed)
½ cup of dark chocolate chips
1 cup gluten free rolled oats
2 tsp vanilla extract
Mix all 4 ingredients together in a large mixing bowl.
With a spoon, scoop cookie batter onto a lined cookie sheet.
Bake at 375F for 10-12 minutes.
These cookies come out chewy (my favourite) and delicious! You will finish them all so quickly that you will without a doubt make another batch. And why not? They’re healthy and yummy. What more could you ask for?
Note: These cookies can also be VEGAN if you use vegan chocolate chips.
