Easy, Healthy, Yummy, Gluten Free Chocolate Chip Cookies

In today’s world we are always trying to eat healthy and live an active lifestyle. Unfortunately it is not always possible, between work, school, friends, family and “me time”. And finding a way to be healthy with all these temptations out there does not help either.

Luckily I’ve come up with a delicious and easy recipe that will not only sing to your taste buds but also please your body!
To make these delicious gluten free chocolate chip cookies, you only need 6 ingredients and about 20 minutes (including baking time).

Ingredients:
1 cup creamy almond butter (I recommend Bulk Barn because it is way cheaper)
2/3 cup of brown sugarpic2
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
¼ cup miniature chocolate chips (semi-sweet or even try dark chocolate)

Once you have gathered all the ingredients, preheat oven to 350°F or 190°C.

Start by mixing the almond butter and brown sugar together. Once combined add all the other ingredients. Stir in the chocolate chips last so they don’t start to melt or lose form.

Use a teaspoon to make equal sized cookies and put them onto a cookie sheet about 1-1 ½ inches apart as they will slightly expand. Once you have all the cookies ready, bake in the oven for about 10-12 minutes.

Do not over bake as they will harden. Let them cool down before removing from cookie sheet as they are very fragile.

When they have cooled, enjoy with a nice cold glass of milk!
